I would spend 2 days in San Gimignano (best to be there in the mornings & evenings - not mid day), and then 3 days in the Val D'Orcia around Pienza (I realized that my response doesn't exactly answer your question).

I can recommend this place http://www.montegufoni.it/en/castle_tuscany.php having stayed there twice. They are apartments not a hotel, but in close proximity to all the major Tuscan attractions. To answer you question directly and if it must be a hotel I would choose San Gim.
