Visiting France, Europe for Two Months

My wife has got an attachment in France for two months.We have two kids 2 years and 5 years. The time of attachment coincides with the vacation in school. This appears to be an excellent opportunity to visit France with the Family.

We would like to keep the budget tight and need suggestions to make our visit memorable. We are preferring to stay in apartment in outskirts to keep the cost of living low and also planning to cook our own food.

Any suggestion of good locality outside Paris for stay for us? What will be estimated cost of the Apartment? I searched on AirBnB and it seems the range starts from Euro 40 and goes higher?
