village/town/city in middle or north England to have our base...

Flying into London and leaving immediately out of the city. (We have been there several times before). This will be our 5th time to England. We would like to stay somewhere in the middle or north part of England but need ideas of where. We stayed last year in Cheltenham and loved it, so we would like somewhere similar. Good rail station (very important), nice shops, good food/pubs, some historical places to visit nearby.

Ideas? York, Norwich, or Nottingham? Any other ideas? We will be there the second week in October. (2 weeks from now.)
