Venice, Maggiore, Jungfrau

Hi Everyone, this is my first post and I'm hoping to get some suggestions or advice (I note participants are very generous with sharing info). We, active Aussie couple just turned 60, have 3 weeks holiday arriving Milan early October.
1. I want my husband to come out of the railway station at Venice and see what I saw 40 years ago across the canal
2. To see the sheer beauty of the alps in Switzerland.
We are normally slow travellers however on this trip, the first few days will be swift touring. Once we have my first 2 objectives done we can settle into relaxing touring. We plan to hire a car in Lyon, head for Biarritz then slowly make our way back to Nice with 2-3 stops over 9 days. We are then basing in Nice for 5 nights.
I would be grateful for opinions on the first 7 days of the trip, in terms of best things to see with limited time, budget accommodation. Are my plans too ambitious given we will have come off a 20 hour flight? Should we allow an extra night in Venice?
Day 1 Milan to Venice by train sightseeing and overnight Venice.
Day 2 head to Stressa by train to begin 3 days on Lake Maggiore, any advice appreciated, looking to base 3 nights here ending at Locarno.
Day 5 Locarno to Interlaken via Domodossola rail.
Day 6 day trip to Jungfrau sightseeing(any suggestions of tour companies?) or is it best to do ourselves. We are on a budget but also mindful that it can be more time effective to streamline with tour company. Overnight Interlaken.
Day 7 Interlaken to Lyon via Bern hop off.
