The last leg of our 5 week trip left to plan is three nights in Venice.
We would like a central location with 2bdrms that can sleep 5. A kitchenette would be nice. Something around 200Euros.

You might find an apartment for that rate (depending on the time of year), but I doubt you'll find a hotel within your parameters (central location, 2 bedrooms, sleeps 5) at that rate.

Corte Grimani
Has anyone stayed at an apartment called Ca Vecchio Pozzo? It has great reviews on Trip Advisor and Home Away. 3bdrms and a kitchen. 3nts for 820euros.
