Vegetarian fare in Paris

Will need help and guidance to plan on where to dine - spending 10 days in Paris with my two daughters - ages 14 and 19, in April. We are vegetarian - this is recent (our first year anniversary is approaching) and I am fearful we will not be able to dine where and whenever we want -
We are staying at the Hotel du Louvre, and will ask for recommendations from the staff, but would appreciate suggestions or shared experiences from fellow travelers. We do eat fish - and love pasta, beans, and vegetables - but are used to eating more countryside than city in Europe.
Of course, the bread and pastries will make up for anything we miss!
