It's rushed, but in general, I think it could work if it meets your interests.
Are you using public transportation or renting a car? If there is any chance that you will have jet lag, then please reconsider picking up a rental car on the day of your arrival, instead giving yourself at least a day or two to recover. Although many people are not aware of it, driving with jet lag is just as dangerous -- to yourselves and others -- as driving drunk. And the chief problem -- microsleeps -- are something you might not even be aware of and that you cannot prevent, not with caffeine or sleep on your flight or anything else.
And from what I can tell, you don't NEED a car for this trip! It might even make your time more complicated, as you look for parking, etc.
I thought Mostar absolutely magical after day trippers left and was glad to spend a night there. You could take the ferry from Hvar to Split and a bus to Mostar, and then a bus from Mostar to Dubrovnik.
Enjoy!

Thank you! I'll be flying from Salzburg to Dubrovnik after already being in Europe for a few days so hopefully, I don't have any jet lag. Would you recommend staying in one place as a base or utilizing both Hvar and Dubrovnik?

Personally, I would not try to see Dubrovnik from Hvar or vice versa -- too much time in transit.
I'm glad you will be over jet lag, but again suggest that you consider using public transportation. IMO, having a car for this particular journey is likely to be more of a hassle than a benefit.

Monday : Fly into Dubrovnik around 11am // Take Ferry to Hvar at 4:30pm, arriving Hvar at 7:35pm Overnight in Hvar.
Tuesday :Full day in Hvar. Overnight in Hvar.
Wednesday: Hvar to Korcula - Ferry leaves at 8:50 am, arrives Korcula at 10am. All day in Korcula. Overnight in in Korcula.
Thursday : Korcula to Mljet to Korcula - Ferry leaves at 10:10am, arrives Mljet at 10:40am. We'll have 7 hours in Mljet. Ferry leaves Mljet at 5:50pm, arrives Korcula at 6:20pm. Overnight in Korcula.
Friday: Korcula to Dubrovnik. Ferry leaves at 10:10am, arrives Dubrovnik at noon. Overnight in Dubrovnik.
Saturday: : Day trip to Mostar. Overnight in Dubrovnik.
Sunday: Full day in Dubrovnik. Overnight in Dubrovnik.
Monday: Fly back out.
Comments: I suggest 2 nights Hvar, 2 nights Korcula over 4 nights Hvar. Eliminates one ferry trip(Korcula to Hvar), shortens 3 others(Korcula to Mljet instead of Hvar to Mljet, Mljet to Korcula instead of Miljet to Hvar, and Korcula to Dubrovnik instead of Hvar to Dubrovnik.Later morning starts on 2 ferry trips. Lower overall cost on ferries. More time on the ground-days 3,4,and5.Allows for 2 earlier dinners- days 3 and 4.To me it is just better overall.
