Unique destinations to add onto Cortona trip

We're planning on renting a villa in Cortona with some friends. I'm trying to think of one or two unique destinations to tack on the beginning or end of our Cortona stay. We have done all the day trips around Cortona since we've been there before (Montalcino, Assisi, Orvieto, etc.) and have been to Rome, Florence, Sienna and Venice several times.

We're considering Cinque Terre but we've heard mixed and I tend to like hotels nicer than Cinque Terre has to offer. Don't know much about Umbria so not sure if there is a great spot there to check out. Open to unique ideas, just don't think we want to go all the way North to the Lake District or south of Rome since we're thinking a Positano/Sicily trip will be another time.

Appreciate any thoughts (we're big on architecture, scenery and food and less about museums).
