Umbria.....Questions re olive oil tastings to schedule vs in-town shops?

Okay...this research is making me drool.......

I'm interested in scheduling some wine and olive oil tour/tastings during our week in Umbria and I have a couple of questions. I'm not sure how many to schedule...1, 2? Can you taste the oil in the shops in town? Is there a shop which sells oil from different producers which you can taste?

Anyone familiar with any of these or have any recommendations....
