Two days and three nights in Nice, France...first timers!

My girlfriend and I are heading to NICE for 3 days and two nights in May (after the Grand Prix). What are some interesting things to do? Are there solid day trips that we can take that are amazing? Experiences we can take? We enjoy seeing the beauty of the towns, mountains, great food.

Also any recommendations on where to stay in Nice? We arent the top of the line people, but we would love to stay somewhere really nice while we are there. Romantic.
