Tuscany with kids; day hikes, hill towns, off the beaten path

Our family - wife and three daughters, ages 16, 13, and 8 be staying near Castellina in Chianti (30 minutes north of Sienna) in a villa for a week and have a rental car. Would appreciate any advice on:

1 - nice day hikes, 2-4 hours round trip especially if any are near waterfalls, lakes, rivers
2 - less touristy areas, hill towns off the beaten path (is that possible!) not too far away
3 - sites that kids (and us) may enjoy that are relaxing
4 - good ideas for Florence, we plan on taking the train or bus into the city
