Tuscany: What are your not-to-miss family experiences?

We are staying in Montepulciano for two weeks with our kids this summer. They are 3,8 and 10.
I am hoping to hear all about your favourite family experiences in the area.
Biking, hiking, markets, wine tasting, cooking schools, monuments.......
The more unusual and off the beaten tourist path the better!
