Tuscany / Maremma ???

We're in the details of planning our first trip to Italy - 3 weeks in September. Rather than asking advice for the whole thing, I'll just focus on separate portions in posts over time. We are three youngish and fit people in our early to mid 70's (a couple and a relative who is an artist).

After spending time in Florence and before Rome we are thinking about spending roughly 5 nights (1/2 day + 4 days + 1/2 day) in the Tuscany/Maremma regions - the focus of this post.

As usual, there's too much to see and do, and too little time. We'll be tempted to see as much as we can, but it would be great to have a restful peaceful and leisurely country stay. (A typical of juxtaposition of opposites). We'll decide whether to drive or take trains or local buses/taxis depending on the logistics of what and where we go.

One of the highlights of the trip for one of us would be to visit and spend a little time at Il Giardino dei Tarocchi (The Tarot Gardens) by Niki de Saint Phalle near Capalbio in the Maremma.

One of the options would be to spend 3 nights in central Tuscany (near Siena?) and 2 nights somewhere close to Capalbio. Another would be to spend all 5 nights somewhere that would be within 30 minutes or an hour (or closer) commute to Capalbio.

What suggestions do you have?

We're mid-range travelers, not luxury, not cheap. In the US would be staying at 3 star motels/hotels.) We'd enjoy either an agriturismo or a small hotel / inn / bed & breakfast in a small village.
