Tuscany: best day trips/tours - cooking classes, wines tours, other...

Have you enjoyed an organised day trip/tour in the Tuscany region that was well managed, personalised, fun, informative and a wonderful memory?

I have 5 days in Florence and a further 9 days in the Tuscan region. I will be doing lots of exploring and driving around just taking it all in, but want to break up my time with a few group activities. I'm travelling alone and love the idea of have this social experience.
