Turkey and/or Greece

Hello Fodorites! I need some advice on my itinerary for a mother-daughter trip in May. I am 60 and my daughter is 30. We are both good travelers, physically fit and enjoy seeing and experiencing history, other cultures, interesting and beautiful sights. We have traveled a lot in Europe, including Italy, Spain and Dubrovnik.
W are planning a trip of about ten ays in May, not including travel time, and are coming from New York City. I've been posting recently about going to Santorini and/or another island, Athens and Istanbul.. Now I'm wondering if we should concentrate only on Turkey, and skip Greece entirely?
1. Would Greece be too much like Rome and the ruins of he islands off Dubrovnik?
2. Would just Turkey not be relaxing enough?
3. How would we get to and see Ephesus and surrounds, and Cappadocia and surrounds without renting a car? We don't want to drive but don't particularly want a typical escorted tour for the entire time we are outside of Istanbul.

Help please! Thoughts??
