Trip to Italy - Places to see and guides to use - Reposting as a question

We booked a trip to Italy from Aug 16 -Aug 27th (including travel). We plan to do Rome -Florence-Venice trip. Our two kids (11 &13 years) are travelling with us, we want to break it down and just not do too many museums day after day. Right now we are thinking 4 days in Rome, 1 day around Tuscany, 3 in Florence and 2 in Venice

Plan to do some day trips potentially in Rome (Pompeii ?) and Florence (Pisa/Cinque terre ?)
Will these day trips be too much ? If not do you have other recommendations ?

We want to do a day in Tuscany between Rome and Florence with a overnight stay in one of the villages. Any recommendation on which villages might be quaint and serve as a good base to drive around the region's wineries and take in the sights? We are also debating if we should hire a guide to bring us there and do the winery tours or are we better off renting a car and driving ourselves from Rome -> Tuscany -> and drop it off in Florence? Any guide recommendations ?
