Trip for 2 to England in late August

I am trying to put together an itinerary for a 7 day trip to England. We are staying at the Danubius Hotel, Regents Park, 18 Lodge Road, Near Baker Street And Marylebone, Westminster Borough. We will be arriving on a Wednesday morning and leaving the following Wednesday morning. It seems that we are staying in a pretty central location in London. We know for sure we want to do the following: Day trip to Paris, Day trip to Bath, Churchhill Museum & War Rooms, Westminister Abbey, Tower of London, Notting Hill, Trafalgar Square/Buckingham Palace, Oxford or Cambridge?, St. Paul's, and House of Parliament. We would like to visit at least two castles. Any suggestions on which ones to visit that aren't too far outside of London and would be manageable to fit into a day without consuming the entire day.
Is it even possible to fit all of this in or are we being a bit too ambitious? We want to see as much as we can without wearing ourselves out completely. Are there things I'm missing that would be easy to fit into one of our days? Would it be worth it to visit Madame Tussauds or the Sherlock Holmes Museum?
Since I have posted where we are staying, any suggestions on good restaurants or pubs to visit in the area?
Also, should we do the Oyster card for travel?
Any help is very much appreciated!
