Does anything happne if you buy one of these tickets and don't get on the return train? They are cheaper than a one way.

Are you sure it's cheaper than one way? What cities are you traveling between?
Naples and Florence. Yes the return special is certainly cheaper
They are not cheaper! One-way Naples/Florence is 72 Euros in second class on the Frecciarossa AV train. The A/R in Giornata fare for this same train is 109 Euros! You MUST purchase both legs of the A/R fare! Have you managed to get the system to issue you only one leg at half the fare? I don't think so!
You should be able to find a mini fare cheaper. As GAC said, regular fare is 72€ and you would have to pay 109€ for the r/t. You can probably find a mini fare on the fast AV train for about 58€. Use this Trenitalia link to show search the discounts on the fast trains. You must enter the Italian names of the stations or you won't get results (it will autofill when you start typing).

Thanks for that I'll look again. I did find the 58e train but it took 5 hours instead of 3 so I went back to the 72e one. When it came up with 109e I'd put in two poeple so I thought it was charging me that for 2! Maybe it was going to double when I put inthe return selection. thanks

You must be entering something wrong. I even see a 50€ fare for the fast train (3 hours) for a random date in September.

When I enter Naples/Florence, there are rates as cheap as 36€ (AV fast train - travel time 2:55).
