Travelling from dec 7-Jan 4th. with 9 year old and 3 years old

Hello, My husband and I are looking to travell with the 2 kids to Turkey from Dec 27th to Jan 4th. I understand that it will be cold, however we live in the Northeast Us and will be used to the cold. I am thinking of doing Istanbul and Cappadocia. Is it madness or is it doable. I am thinking 4 days in Istanbul and 2 days in Cappadocia. Please let me know your thoughts and what will be open
