Traveling from Texas to London, Paris, Amstrdam, Germany

We will be spending 2 days in London, taking the Eurostar to Paris for 3 days, then the train to Amsterdam for 2-3 days, then taking the train to Heidelburg and renting a car. We will then go south to Freiburg and loop around to Frankfurt leaving to go back home. I would appreciate any ideas on what to do and any excursions that would be worth taking the time to see. Any ideas in Amsterdam and Germany would be much appreciated. Should we exchange money here in the states for pounds? Thanks!

We have 7 days in Germany. Our trip is from April 18, 2012 flying out of Texas to London and returning May 4, 2012 to Texas.
