Traveling from Athens

Ok. Where to start? Umm..I am from North Carolina in the US, and will be doing a 3-week study abroad trip with my school from Istanbul to Athens (one week in Turkey, 2 in Greece). My intentions are that (since I have never been to Europe, ever) when my school group leaves I (and possibly 3-4 other fellow students) will spend between 1 and 2 weeks in Europe and hopefully travel over to Western Europe. This will be my first time traveling alone in a foreign country, and this is the first huge trip I have ever planned, so if anyone has any advice or thoughts on what trips I should take, where I should go, or just "common" knowledge on traveling abroad, please reply!

(Also, being only students, I assume our budget for travel may be as small as 500, maybe less. :/ )
