Travel with connecting flights

We will be heading to Rome from Newark with a stop in Toronto for a few hours on Air Canada. I will check my luggage through to Rome. Do I have to go through immigration. What do we have to do go though in Toronto. We are new to this.
Also flying from Rome to Munich for a stop and then onto Newark. What happens in Munich? When do you go through customs? I have read to check luggage through to last stop as this is one ticket.
