Travel Paris to Interlaken- how far in advance to purchase tickets?

I see that SBB only allows train tix purchases online 30 days before travel. I would like to review the trip routing with someone in the train station before committing 4 tickets purchase. In particular, I am worried about the connection times at train changes; there is one that is only 5-10 minutes and I am thinking I may miss the connection if I get lost getting to the right platform.

If you purchase a ticket and you miss the connections, what happens? Do you just jump on the next train?

Is it risky to book the tickets the day you travel? The other thought is I buy them when I reach Paris, which would be one week before travel.
