Travel Insurance - how much of trip cost to cover

I absolutely want travel insurance. We are going to be in Europe for almost 3 months later this year. I figure our travel costs will be approximately $X000 for 2 of us. Air fare, hotels, trains and other non-cancellable costs.

Do I want to state the amount on the quote as $X000 or do I want to use a lower amount?

Since this trip will involve several different legs, it isn't likely that the entire thing will suffer from flight delays, lost bags, baggage delay. It isn't like this is a 2 week trip that if something happens, all of the costs will be lost.

If I use a lower amount as the cost, I realize that will give me a lower payback if something goes wrong.

I know - in the overall scope of total cost, the trip insurance isn't all that much. the difference is a couple of hundred $$ difference for the full cost vs. about 60% of the cost.

The baggage and travel delay is a set amount, so it wouldn't cover every flight segment.

What do you think??
