Train.
If you decide on this you'll need to use the TGV website to buy/reserve your tickets. There are other websites you can also use (like Thalys http://www.thalys.com/fr/en/) but I'm familiar with the TGV site. For info on these trains use the website www.tgv-europe.com for schedules and prices. Don't forget to uncheck the box marked "Direct Trains" to see all possible options. If the TGV site redirects you to the RailEurope website then try again and enter "Antarctica" as your ticket collection country. You might also try Great Britain or some other country. The RailEurope website often doesn't show all the trains and generally has higher prices but you can look just to compare. You can buy tickets up to 90 days in advance and the earlier you buy them the cheaper they will be. The discounted tickets are known as PREM tickets but these are non-refundable and can't be exchanged.

I just searched the TGV site and picked a random date 3 months from now and on that date there are fares as low as 35€ for direct trains between Amsterdam and Paris.

My favorite train info website, as well as lots of other people's, is the Seat61 site. Here is Mark Smith's rundown on buying European train tickets and Amsterdam to Paris specifically:

I just booked 2 tickets for May 5 for 70 Euro. Book 3 months out to get the best prices. I checked yesterday for the Saturday before and that price was only available late afternoon. Since it is February 5 in Amsterdam now, I just tried and could get any time for 70 Euro.
