Train to Sorrento

Hi travellers! I am looking at booking a train from Rome (Termini ) Station to Naples then on to Sorrento for 1 night in September. I was looking at booking a Trenitalia city line train or the frecce, then going on to Sorrento for the day maybe go to Capri or a cruise around Sorrento ? Stay the night at a hotel or bnb in Sorrento. The next day go to Pompeii for a few hours , then from there go back to Termini Rome by a reginale train as we wont be in a hurry to go back as we will staying in Rome for 2 more nights. Or do I book a fast train to return? Not sure if there will be seats on the regionale train as I don't believe you can book these? is it just first in gets a seat?

We were going to do a daytrip by bus but thought too much time would be wasted driving and wanted to see Sorrento as well. All help will be appreciated
