Train Reservations

My travel question: my sister and I are traveling to France, Italy and Germany this summer. We have all ready booked flights, hostels and even purchased a Regional Eurorail pass for France and Italy (a friend will help us out when we arrive in Germany). We purchased the tickets on eurail.com We will be arriving June 13th in Paris. We would like to make a reservation on a fast speed train from Paris to Nice (june 16th). We also would like to reserve seats on our Italian trains. We unfortunately cannot do this through the Eurail company. Any advice or websites that can help make the reserving process easier is greatly appreciated! It is to our understanding that the high speed trains book fast!
