In US $ about $60 one way if booked 120 days from departure.
Prices go up the closer to departure you get.
Book on Eurostar website
If booking closer to departure then the 'trick' is to avoid weekend and/or peak travel times so heading to London at 8pm on a Wednesday night will be cheaper than Friday afternoon.

Eurostar runs like an airline - prices are all over the place. The earlier you book the better the chance of a lower price. And the least popular train times (often very early am) are cheaper than the prime time trains. You can pay as little as $60 - or 2 or 3 times that much depending on when you buy, what train and what class of sets.

I just booked round trip to Paris and back for a September trip for the two of us at $200 total. I think this is a great price! i wanted to go first class, but I couldn't resist this price. We have taken the Eurostar before in 2nd class and it was fine.

There is only one time I might ever recommend even looking on the Rail Europe website and that one time is if you are looking for Eurostar tickets. You can purchase them now for September and the price, $67, is no more than you will pay elsewhere.

I booked right at 120 days ahead of my trip and got our tickets for $108 each (one-way, London to Paris) on eurostar.com; There were some less expensive departure times (very early or after 4pm, I think) that would've been more like $60pp.
Good luck

@lantana -- I ran into the same thing when booking London-Brussels. I thought I was 120 days out (maybe 119) and the preferred times were already more expensive. I wondered if they were really gobbled up right away or if the ideal times never had the cheapest rate. Oh well. I paid for the time because time is money!

@indy_dad I actually booked my tix 3 days past the 120-day mark; I wondered about the rate too. But I checked just now and all the prices are just as they were a month ago. I know they'll go up - but not sure how low they were on the very first day offered.
For my daughter's sake, I didn't book very early in the a.m. I thought I'd let her sleep in - plus, we'll avoid rush hour in the process It will be nice not to have to rush that last day in London.
Time is money, indeed!

@PeaceOut - Congratulations on your tickets.
I just checked the eurostar site and $57/adult is still the price for my travel date in mid-July but it's for 5:40, 7:01,7:31,17:31 and 18:01 departures.
7:54, 16:01, 16:22, 19:01 and 20:01 are currently $83/adult;
8:31, 11:31 and 15:01 are currently $108/adult;
9:12, 10:24, 12:24 and 14:01 departures are now $131/adult.
These are all for one-way, non-flexible tickets.
