To bike tour or not to bike tour?

I'm going on a ~3 month bike (or not) trip with a friend of mine for May-June-July of 2014 with one friend. We're flying into Milan where I have family and will make our way through Germany, camping/hosteling along the way, take a prolonged stop in Amsterdam and then go to Calais to take the ferry to Dover and then use one of the UK Cycling networks to bike to Edinburgh, where he has family.

Background: I am decent at Italian and good at planning/logistics. I can pick up languages very quickly and am comfortable speaking foreign languages, so I don't think learning the bare minimum of German would be a problem. I have bike toured through Nova Scotia before for three weeks. My friend can not speak any foreign languages and has never bike toured. He also has really bad ADD and is bad at forethought etc. We are both 19. We are both experienced road bikers with minimal racing experience. We will have just finished a 3 month mountaineering and sea kayaking trip in Chile, so camping will not be a problem. It's the biking and logistics that I am most worried about.

We were planning on getting our bikes and equipping them this week but my question is this: Would it be easier/better if we just brought backpacks (I know, probably overdone) and spend a maybe a week or two per city rather than constantly bike.

Our goals with this trip are about half nightlife, 1/4 dining, 1/4 historical sightseeing. We've agreed to go out maybe 3x/week.

Any and all information or suggestions are welcome. And if this is currently too idealistic then please let me know because I've done hours of planning and research but I know and recognize that there are countless things that I won't be able to plan for until I actually get there.

The bike route we have planned now is roughly verona- munich- nuremberg- dresden-berlin-hamburg-amsterdam-calais-dover-london.

Our budget for the entire trip is about $5000 per person (which is why we are gravitating toward camping/biking)
