Timing for Lavender Fields in Provence for 2015 Trip

Hello , my family will be in Paris in July , I reserved an apartment from July 11-18 ,specifically those dates as the kids want to see Bastille Day fireworks on July 14.
\We went in 2010 and it was so much fun (crowded and a challenge to get back to the apartment after). After Paris , we want to go to Gordes/ Provence to see the Lavender. so around July 19, is that too late? I read that Lavender are harvested end of July/August. We went in 2010 around end of June /early July and the Lavender were light purple and not the deep purple color i had in mind. I could switch the trip and go to Provence first but i'm thinking of flying from Marseille to Venice after , and don't want to backtrack.
