Three Months in Southern Spain

My wife and I live on the Yucatan Peninsula in Mexico and are retired. We rent our accommodations, long term and after 1 1/2 years here, we are ready to do some exploring. We have decided to check out parts of Europe, starting with Southern Spain (my wife does not want to even think about cold weather) We would like to spend the maximum time allowed on a tourist visa (90 days) before heading back home to Mexico, to plan our next adventure. We are just starting our planning but hope to rent a small apartment somewhere within walking distance of a beach and groceries. We both love to walk and don't plan on renting a car if it can be avoided. After watching some very nice videos on the subject, we are excited to experience the culture and history of this part of Spain. Can I assume there are bus tours to various attractions and cities/towns in the area ?
Also, 3 months will allow us to see some more of Europe, using some of the inexpensive air fares available. (I lived in a small community in France, near the German border in the late 50's and would love to go back for a look)

So, three questions for those with some experience in the area.
1) Will we be able to rent condo or apartment for 3 months without breaking the bank ? We are open to being anywhere on the coast.
2) Will we be able to live in reasonable comfort for 3000 Euros mth, including the odd meal out and some entertainment. This does not include travel from to the chosen towns and cities during our stay. ( separate budget ) I do realize that it all depends on one's chosen lifestyle but a best "guestimate" is all that's required.
3) When does it get warm enough in the spring to swim in the Med and spend some time in the sand ?
