The right tour or class in Paris for my Bread Obsessed Husband???

Yipee - just booked our 6 days in Paris in early June (stopover on way to India). My husband is a bread baker (no knead bread) and in general obsessed with bread baking. I'd love to arrange for something special for him in Paris..... could be a class or a tour. I googled a little and there were lots of options so seeking some personal advice.

He's pretty advanced on knowledge of bread, bread chemistry etc so a class would have to not be just simple.

He sort of was hoping our Europe stopover wouldn't be Paris but it's what makes the most sense in our travels so I'm especially keen to make this a special treat to get him excited. But this is just one idea..... Thank you for any toughts
