Thalys fr Paris to Bruges, stopping for the day in Brussels with two teens

Thanks to the information on Seat61.com, I have managed to figure out how to get to Bruges. However, I can't book teenagers with adults in one fell swoop online, I have to call Thalys.

MUST I call Thalys? Can I just book them as adults? There appears to be no significant cost savings (I checked the fare for the same route as youths), and there's a fee with a telephone booking as well as the international dialing cost.

Secondly, I've chosen the ABS to enable us to get to Bruges from Brussels, but there's a time on the continuing ticket. Do I just board the IC train when we're ready?

Thanks in advance. I imagine I'll have similar questions for our train from Bruges to Amsterdam.
