Hi grcouch,
When will you be there?
In general, I can recommend the Engadin Valley in eastern Switzerland as off-path travel, at least for many English-speaking visitors. You can see the Lower Engadin (Scuol, Guarda, Ardez) or the Upper Engadin (St. Mortiz, Sils, Silvaplana). More information at:
www.scuol.ch
www.engadin.stmoritz.ch
Some other options might be Brig, Kandersteg, or Andermatt.
Have fun as you plan!

When?
Though I would also recommend the Engadine, it is a long distance from Bulle ...
We will be there in late March. Engadine does seem a long way from Bulle. Looking at staying in Montreux a day or two, head to Brig for a couple of nights...day trips from there. Better to head to Lucerne or Biel? Last night in Bulle. Also would like to know of apartment like lodging near Brig. Prefer that to hotels!
Hi again,
Well, Montreux is only about 1h or 1h30 from Bulle, so you would make better use of time to make a day-trip to Montreux rather than switching hotels and all the fuss that entails. If you wanted to make two trips to Montreux, you could go two different ways -- one way via Montbovon for the Golden Pass route, and one way via Palezieux & Lausanne (maybe to spend time in Lutry and Vevey).
From Brig, I hope you're planning to see/walk around at Bettmeralp and Riederalp, very interesting high peaks.
Luzern has more nearby mountains than does Biel, though Biel has the vineyards.
Have fun as you plan!
