summer sun--Greece? Elsewhere?

I have recently relocated to Ireland from the US, and have not acclimated to how far I am from the Carribean! Previously, I traveled almost every winter for a week in Virgin Gorda, BVI. I am aching to find a similar location a bit closer to Europe, even if it means moving the beach time to the summer.

I'm thinking the Cyprus, Crete, or the Greek Cycaldes islands are my best bet, but does anyone else have suggestions for beautiful beaches that won't be overrun with tourists in July, and are less than an 8 hour flight from Dublin?

If I choose the Cyclades, which island has the best beaches? What are the chances of finding a quiet place on the beach, preferably a villa or house? We have an infant, so don't need nightlife. I just crave sun and sand and beautiful views.
