Suggestions: what to see/where to stay between Kenmare and Dublin?

We're heading to Ireland in late May/early June for 9 days. Very exciting! This is our planned itinerary/ideas- none of the sights are written in stone, a bit will depend on the weather, but the B&Bs are now booked- so they're fixed.

Day 1 Sat Arrive Shannon 5:05 AM. Pick up rental, drive to Doolin. -Cliffs of Moher
(1st overnight Doolin)- Roadford House
Day 2 Sun -Aran Islands
(2nd overnight Doolin)- Roadford House
Day 3 Mon -The Burrens ½ day & TRAVEL ½ day to Dingle via the ferry
(3rd overnight Dingle)- Greenmount House
Day 4 Tues- Dingle - Connors Pass, perhaps Mt. Brandon 5 hr hike
(4th overnight Dingle)- Greenmount House
Day 5 Wed- Dingle -Slea Head Drive & TRAVEL ~3 hrs. to Kenmare
(5th overnight Kenmare)- The Driftwood
Day 6 Thurs- Killarney Natl Park – bike the Gap of Dunloe, Ross Castle, Torc waterfall
(6th overnight Kenmare)- The Driftwood
Day 7 Fri TRAVEL to Dunmanway area (ancestors are from here)
(7th overnight ??? here or on the way to Dublin?)
Day 8 Sat TRAVEL to Dublin (Rock of Cashel, Cahir Castle on way), return rental
(8th overnight Dublin)- Aberdeen Lodge
Day 9 Sun Dublin – hop on/off bus
Kilmainham Goal, National Museum, Trinity/book of kells, Christ/St. Patricks, Guiness
(9th overnight Dublin)- Aberdeen Lodge
Day 10 Relax, hang out in AM @ Stephen’s Green?…fly out Dublin 5:00 pm

I'm having trouble with what to do, where to stay on day 7-8? We'll probably just wing it, depending on what information we research/have re: our ancestry in Dunmanway, and how long we really want to spend there.....but when we do leave, what should we see on our way to Dublin?

To preface, we are 37, 47 active, outdoorsy people who want to visit a few castles, a few historical sights- but don't want to spend our entire week looking at ancient rock. I think thus far our itinerary has a nice mix- a ferry to the Aran islands where we can bike- will see the fortress, hiking in Dingle- will visit some ruins, biking in Killarney- will see Ross castle....

Should we stop down in Kinsale and spend our time relaxing in a beautiful sea town, check out Gougane Barra and/or Glendalough- both of which I know little about, or stick with our tentative Rock of Cashel and Cahir castle ideas- both of which I've read rave reviews of??? Any other ideas?

If anyone has any favorite "off the beaten path" real Irish restaurants, pubs, sights along our planned route, I would love to hear!
