Suggestions for Xmas Destination in Europe for honeymoon

Hello guys, my wife and I are from Taiwan, we are apart from each other this year as I am based in the UK and my wife is working in Taiwan. As Taiwanese don't need to a visa to visit EU countries, and based in the UK is more convenient to visit other European countries than other continents, we planned to find a suitable spot in Europe for our honeymoon.

We probably will have a 3-week holiday and we want to experience the local atmosphere for Xmas. My wife will be flying around 21-22/12 approximately from Taiwan so she probably will be arriving around 23-25th in Europe. By doing so we hope can find a spot will keep celebrating Xmas after the 24th or 25th.

We are trying to avoid meeting the crowds or going to touristic spots as we hope like locals to experience traditional Xmas atmosphere if it's possible. Also we hope it won't be too pricey for us.

I have done some research and have found that people recommend Vienna, Bruges, Strasbourg ,Cologne or Napapiiri etc... As my wife has been to Prague, Cologne and Budapest these spots will be skipped this time. I'm worried that it will be freezing in Scandinavia or Northern Europe so maybe we should focus on Southern Europe like Spain, Italy or Malta ? I have noticed that Xmas markets in Barcelona is awesome as well.

Another worries is I understand that Xmas is holiday in Europe so most of restaurants or spots will be shut down during that time? We want to plan ahead to buy cheaper flight ticket in advance so we hope to sort it out as soon as possible. I hope my questions won't be too vague.
