Suggestions for areas to explore around Ariege (Toulouse/Bordeaux)

We are two young women (late 30s) who are travelling (as friends - in case that matters to anyone, I'm sure not) to South-West France . We are spending a week (7 days) staying in Clermont La Grausse at a yoga retreat there. We are arriving at Toulouse airport and will stay overnight in/around Toulouse where we will pick up our car at the airport and the next day will drive to Clermont La Grausse for the 7 day retreat .After the yoga retreat we will have 3 nights before we will need to drop off the rental car and send a last night in Toulouse before an early flight back to Canada.

My questions:

Any recommendations for a good (100 euro) place to stay in/around Toulouse the first night? We arrive from Halifax to Toulouse around 4pm on Friday (June 28/13), and will need to pick up the car and negotiate to hotel for a night before heading out the next morning for the retreat in Clermont La Grausse.

We do have lots of free time outside of the yoga sessions...we picked this retreat for a reason...the beautiful surroundings, the abundance of wine, the small towns to hopefully explore, the markets for great food (the retreat is a self-catering place), the abundance of wine....but around the area of Clermont La Grausse are there places to travel for short day trips (yoga in morning til 10:30am and at 6pm, otherwise "free")?

Any suggestions for spending a few nights within driving distance? I have spent some time in Provence (Lourmarin, Aix, Arles, Avignon and other lovely smaller towns), and though I would easily spend our time there, was hoping to explore a bit of new territory. We thought of Bordeaux, but nothing is drawing me there more than anywhere else - so I thought I would draw on the vast Fodorite experience for some suggestions.

To clarify - this is not a budget trip, but nor is it luxury, we are sharing a room, and are content will small, family run places (under 100 euro/night) as opposed to luxury chateux (or maybe 100 euro/night is budget? - not sure)
We are there from June 28 - July 9 2013. We love markets, lots of walking, a few museums, good comfortable restaurants.
