Stops in our Train Ride from Málaga to Copenhaguen.... Yes!

Ok, it's ambitious, but interesting. I feel...
Starting in Malaga 3 days for a pre/ post wedding celebration,
Granada for 3 days of Moorish exploring
Granada/ Antequera to get on AVE- Sleep in Zaragoza
Continue on to Barcelona to
Perpignan/ Avignon for 4 days of Provençal exploring
Avignon/ Dijon to visit a niece, overnight in a Bourgogne 17th century farm
Dijon to Paris for 4 days of eating Berthillon chocolat foncé ice cream
Paris / Bruges overnight in beautiful BB on canal, eat more chocolat
Bruges/ Amsterdam for 3 days of light and shadows
Amsterdam via Hamburg to Copenhagen...
Fly from Copenhaguen to Bergen to get on ship for Baltic cruise.
So we need to pack light and flexible and creatively to use in Spain vs Finland
Any suggestions, feedback and opinions will be VERY well received
