Stopover from Copenhagen to Stockholm
If we decide to drive from Copenhagen to Stockholm it looks like a 7hr + drive from rental house to rental house.
If we do it in one day is there a town along the way that would be a good stopover for lunch and a walk around?
Or is there a town we should consider as an overnight because there is something cool there or nearby?

I drive that route quite alot, from Copenhagen taking the ferry to Helsingborg and then driving up the E4. It is a really long way, the road is not that interesting. Take the train or fly would be my recommendation. If you really do want to drive, then a stop at Jönköping might be nice, the lake is really lovely and the best sight along that route that I have seen. I've not stopped for lunch there but according to TA there are some decent places in Gränna. If there is something cool to see I wouldn't mind knowing about it.
Are you hoping to pick up a rental car in Denmark and drop it off in Sweden? Beware of one way drop off fees.

I was recommended to stay or visit Vadstena once, when I visited Östergötland and also the Göta canal. I forgot about that!

I suggest Orrefors Kosta Boda. These are three tiny villages which produce beautiful hand blown glass. You can visit the works and see it being made, by workers in flip-flops and cut-offs. OSHA would scream. And you can buy seconds at a fraction of retail in the Kosta Outlet. Only a trained eye can see any defects that may be present. I visited 40 years ago on a drive through Sweden and bought a lot of glasses and other items.
Sweden is a lot of pine forests and granite boulders, much like parts of western Michigan. I suggest you get off the E4 at Ljungby, go east to Vaxjo, and then continue on the 25 another 15-20 miles to the 28. Go north. The villages O-K-B are hidden in the woods. I stayed in a nice B+B in Kosta, I believe. Then continue east and catch the E22 coast road north at Kalmar. There is an old fort at Kalmar but I didn't visit and can't comment.

We drove from Copenhagen to Stockholm many moons ago. I remember mile after mile of tall, straight trees. We stopped in Ystad (for me to buy sneakers) and visited the Castle at Kalmar and stayed over there.
Wish I'd known about the Orrefors stop. My first job was with Steuben Glass (part of Corning Glass) and the process is fascinating to watch.
