If we stay two nights in the Interlaken area in July - should we stay in Lauterbrunnen? - What is the best hotel and how is transportation if we go by train or car? Many people say to stay away from the town of Interlaken because of crowds. Our concern is how to get around if we have a car or should we plan to take trains. Any suggestions would be helpful

Trains are perfect as most excursion will require taking (cog-)trains or gondolas anyway. Two nights are not really much to see the area so you need to concentrate on the highlights - which are the mountains.
Hotel Oberland in Lauterbrunnen is a good base.

It's not just the crowds. Each morning and evening, and especially with only 2 nights, you'd be spending precious time on a train (about 20 minutes each way) going to and fro. That extra time could be spent hiking one more trail or just breathing in the beauty that surrounds you.
Lauterbrunnen is a lovely valley, surrounded by the peaks of the Alps. It's a great starting point for your Alps excursions. From here, you look UP to the mountaintops.
For an alternative location (and IMO, preferred), I would suggest you also check out Wengen or Muerren for INYOURFACE views of what many folks come to this region to experience.
And no need for a car. As Ingo says, you'll be on the mountain trains, trams, gondolas, etc. anyway to get up the mountains.
