Serrano ham...oh-my-God!
Jamon serranno, patatas alioli, quails, lamb chops to die for, churros, and a drink called Tinto de Veranno.. red wine and lemon seltzer, which is very refreshing, not too sweet, and half the price of Sangria.

The Spanish are possibly more food conscious than the French.
Try suckling pig, lamb, deer.
Fish cooked in a bed of salt.
Baby eels, squid, razorfish etc etc
And the reputed best ham (not cheap) is pata negra.
