Spain vacation help

Planning a trip to Spain from US for about 10 days (8-12?) towards the end of October into November 2015. Mostly interested in food and local culture.. Don't want the tourist traps.. Can fly into any major airport but have a weeks timeshare exchange in Malaga. Can we use that as home base ? Do we need a car to visit Andalusia or are the buses reliable? Would love to visit olive farm and winery and see flamenco dance and of course eat tapas! Then looking to spend 2-4 days either heading towards Madrid or Barcelona and can fly out of either. Any help and suggestions would be appreciated.. Traveling on a limited budget!!
