Spain Itinerary in Sept/Oct

I am in the midst of planning our 21 day trip to Spain and reading everything we can get our hands on.
We are a retired couple that are active, love walking and biking, this is our 6th trip to Europe and love it.
We have seen a lot of museums, Churches etc. in our time in Europe, so will be cherry picking the important ones and would like to do a lot of wandering the streets, exploring and just enjoy the people and the ambiance/culture.
Plan to do mostly public transportation, though have driven extensively in Portugal, Italy and Uk, so not worried about driving if necessary.
We will be flying into Barcelona and out of Sevilla.
Planning to do lots of day trips from our centers but here was our planned stayovers:
Barcelona - 6 nights
Madrid - 5 nights
Toledo - 1 nights
Granada - 2 nights
Tarifa - 3 nights
Sevilla - 4 nights
If any one has any thoughts or suggestions it would really be appreciated. We are wondering if we should add a couple of nights in Valencia (at the expense of Madrid & Barcelona), add a couple of days for Morocco/Tangier. The white hill towns sound fantastic, similar to Tuscany (?) which we loved and hopefully would be able to do them from Sevilla and Granada.
We stayed in Lisbon for a split total of 8 nights last year and thought it was fantastic and are hoping Madrid and Barcelona would be as enjoyable.
Again any guidance would be so appreciated!!!!
