Spain Driving Trip Barcelona - Valencia - Granada - Madrid

I’m planning a trip to Spain at the end of August with the main goal of getting to the Tomato Throwing festival in Bunol – it looks ridiculous & I want to see it!
I’m living in Germany at the moment so the flight is pretty short, but not exactly ideal - due to the combination of RyanAir flight availability & my work schedule I’m flying into Barcelona late on the 25th of August and leaving from Madrid late on the 3rd of September….
After contemplating the map, travel guide, and train schedules I am planning to just rent a car on my way out of Barcelona and drop it off on my way into Madrid – the train schedule/prices just weren’t making any sense for the Bunol (Valencia) and Granada section of the plan…
I’m looking for an overview this trip, not an in depth stay – I can always fly back down to see more/stay longer in the cities, so I want to see a bit of the country side while I have a car. I love to see the things that make an area unique – food & wine, historic buildings/architecture, occasional wander through a museum if it’s something special/unique, just walking around in the cities or hiking/driving through the countryside….
What I’ve got:
Aug 25 (Sat) arrive Barcelona 23:00
Aug 26 (Sun) Barcelona
Aug 27 (Mon) am in Barcelona, pick up rental car – overnight Bunol
Aug 28 (Tues) Requena Festival??/Valencia – overnight Bunol
Aug 29 (Wed) La Tomatina Festival – overnight Bunol
Aug 30 (Thur) drive to Granada, overnight Granada
Aug 31 (Fri) Alhambra (08:30 tickets) overnight Granada
Sep 1 (Sat) - ?? somewhere between Granada and Madrid ??
Sep 2 (Sun) – drive to Madrid, drop off rental car – overnight Madrid
Sep 3 – Madrid, flight home 20:25

So, what I’m trying to figure out…
Is there anywhere I should stop on the Barcelona – Valencia drive? Just take the Toll road and get there or is there a scenic drive that’s worthwhile?
I saw something about a Grape Harvest Festival in Requena the last week in August but I can’t find any details – anyone know anything about the town or the festival??
Where should I leave the car while I’m in Granada, is there parking in the city or a park-and-ride on the outskirts?
Where should I overnight on the 1st between Granada and Madrid (Seville, Cordoba, Toledo)?

Yes, I know this would all be easier if I had just booked the 4 day trip to Valencia like my friends - but easy isn't always the most rewarding :)
