Spain - Barcelona and where else???

Hi everyone, it's been a while since i posted but I have been lurking - reading other people's posts & TR's. Now I have a trip of my own to plan - yay! Just started looking into Spain for next May. We will be travelling with our 23 year old daughter & hopefully our 26 yr old son who always resists & then joins us at the last minute (DD tells him she can't understand why he would turn down a free trip to Europe!) I guess it's not cool to travel with your parents at that age.

We plan to leave on Sat May 10th since DD only has that week off. Barcelona seems to be the place everyone wants to see so we will be in Barcelona for 4 nights - will probably look into renting an apt. Then on to Madrid for 2 nights. The kids will probably fly out of Madrid on Sat, May 17th. DH & I will have another 2/1/2 days since we are planning to return on Tuesday - the question is where do we spend those days? Most Fodorites will probably suggest staying in Madrid but Madrid does not particularly appeal & I would really like to see another place. Trips to Europe are not easy to come by! Here are some of the options I came up with:

1. Take a train to Seville & back.

2. Fly to Lisbon & fly out directly to Boston.

3. Fly to Istanbul & fly out to Boston. I know Istanbul is much farther but since we are using award tickets, we are able to do that. The only problem is that they will not be nonstop flights but I think it's still worth it.

4. The Canary islands maybe? Have not done much research into this so I am not sure how easy they are to get to from Madrid, which one we would go to etc.

As for our interests, we like natural scenery, beaches, architecture, outdoor cafes, bazaars, nightlife - not too much into museums. We love the feel of Europe - cobblestone streets etc though my ankles kill! We like being outdoors especially in good weather, spend enough time indoors in Boston in the winter.

Any other suggestions are welcome. We have to decide where to book our return flight from so need to make up my mind soon. Thanks again, my trips would never work out as well as they do if I did not have the help of everyone on this forum - don't know what I would do without you!
