Southern Italy--Croatia--Greece

Hi Guys. We're starting to plan our next adventure and we are hoping to do Southern Italy, Croatia, and Greece. My wife and i are not a big fan of cruises but its certainly an option. Can somebody suggest an itenirary. Can you ferry from one place to the next or is flying the best way? As well, what time of the year do you guys suggest/ We just came from Barcelona and the Soth of France. We are not big on historican sightseeing as much as we are more to just generally have a good time. Flying from Canada, we normally budget about $7000.00 excluding air fare. We are in our 40's if that is relevant.
