Southern Iceland

We're flying to Iceland Sept 2-3, and I am trying to put together a tentative itinerary and book lodging so I can decide when to fly home. Our whole trip will probably be 3-4 weeks
Our thoughts on lodging: we prefer self-catering to hotels or B&Bs; minimize one night stands, wonder if larger towns have more options for lodging, restaurants, grocery stores.
I'm feeling stuck and second guessing myself. After 2 nights in Egilsstadir, I reserved 2 nights in Hofn. Originally thought the next stop would be Selfoss, but now worry it's too far from Hofn (google maps tells me 250 miles). Is it too far?
Is there someplace west of Hofn that would be a better option for the 2 nights I've booked in Hofn?
Should I change Hofn to one night and add time in Vik? Or someplace else?
Other advice? Thanks!!
