You might want to do some trips on your own so you can make your own schedule. You can easily hop the bus to Siena and spend the day (last return bus about 8 or 9 pm). Siena is easy to maneuver as the bus drops you at the edge of the historic center.
Pisa, Lucca, Bologna would all be possible by train.
You might want to book a tour to areas that are a little more difficult to reach (Volterra, Montalcino, San Gimignano, Cinque Terre). The tourist office in Florence will have a list. CAF has some of the more reasonably priced tours.

I often travel solo and last time I was in Florence, took a bus to Greve. They were having the Chianti festival at the time. Enjoyed the wine festival, but didn't care for Greve so much.
