Small town near Frankfurt for night before flight.

Mainz or Wiesbaden - Mainz has slightly more antiquities (1000 yr old Mainzer Dom), Wiesbaden is an elegant spa town. Both are packed with good restaurants, both are close to the airport (about 40 mins by train).

Decent places, but neither Mainz, pop. 180,000, nor Wiesbaden, pop. 278,000 qualify as a small town.
You don't say if you need to be on a rail line,, how far "near" means to you, or whether direction from FRA matters (if you are coming from south of Frankfurt, do you want to drive north of the city for this last night.
If you want to be within an hour's drive, you could consider Rudesheim (west), Limburg (north), Miltenberg, (south/east).
Or you can just wait until Mainhattengirl answers and see if she can convince you to stay in Frankfurt - I'm sure she will also offer more alternatives.

On to the question at hand:
Frankfurt itself is less than 15 min. from the airport, so you could consider stayng in one of the lovely old neighborhoods in the city. Westend has lots of nice, B&B type of hotels. Bornheim and Sachsenhausen have some nice ones too. Höchst would be an excellent possibilty too.
If you still want a small town though, consider Kronberg, Bad Homburg, Eppstein, Hofheim, Königstein, or Seligenstadt. All of these towns will need a train trip of 30-45 min. back into Frankfurt though, before catching a train to the airport.

You've been given lots of good suggestions.
I recommend, if you have a car, turn it in the day before you depart. Then you won't have to worry about traffic the day of your departure and one less thing to worry about doing before you get on the airplane.
If it were me, I'd pick a town with good, quick, regular train connections to the airport. That way if I miss the first train, I'd know another one was coming soon.
I'd also pick a town I'd never been to, perhaps one off the beaten path, or Frankfurt itself. My last trip to Germany I made a special effort to stay in Frankfurt the night before departure and made a trip into Sachsenhausen for an evening at an apfelwein restaurant.

Thanks for the suggestions, We will have a car and would like to stay with in 30 - 60 minutes from the airport. We will be leaving on a Saturday or a Sunday so how will the traffic be? We need to be at the airport by 10:00am.
Visiting Frankfurt never appealed to me but I will do some research and maybe reconsider.

If you do decide to consider Frankfurt, you could plan to see something " on the way" and arrive in Frankfurt mid to late afternoon, Saturday. Drop the car at the rail station or another central location after dropping your bags at a hotel, and then enjoy a late afternoon and evening in Frankfurt with only a short cab ride or cab/train ride to the airport Sunday morning. Depending on the time you picked up the car, this might even save you a day's rental and pay for taxi fare to the airport. The closer you stay to the train station the easier this all gets.

Try Mainz. Not a small town, but much smaller than Frankfurt, with a pleasant pedestrians-only old town along Augustinerstrasse and the car-free Marktplatz close to the main cathedral. You can also stroll car-free through a more modern shopping zone to the northwest of the cathedral. To minimize departure day troubles, I'd drop the car in Mainz and take the S-Bahn straight to the airport terminal - there are dozens of trains headed there every morning. You might also check out Bad Nauheim. Stayed there in the early 80s the night before flying out of Frankfurt (at night) and enjoyed the spa which extended through the wall of the building out into the chilly public park.
